Welcome to I.C Waffles, Tauranga’s little dessert bar with a big sweet tooth.


We make almost everything ourselves: the waffles, brownies, stuffed cookies, cheesecakes, and the way we layer, bake, and plate it all comes from our own recipes, built right here in our kitchen. We’re hands-on with the good stuff and finish our creations with the fun bits like sauces, chocolate truffle, and toppings. Because let’s be honest, no one’s making their own Oreos at 2 am.


I started I.C Waffles because I wanted desserts that taste like they were made with love, not pulled from a freezer box. Living with HEDS and a kidney disease, I’ve had my fair share of tough days, but creating desserts has always been my therapy. Every batch, every slice, and every drizzle is a mix of passion, stubbornness, and way too much sugar.


Eight weeks into opening our Greerton store, we’ve already seen families, couples, and dessert lovers from all over New Zealand walk through our doors, and it’s only the beginning.
